About Dining Innovations

Dining Innovations started in 2008​ by restaurateurs James Kammann and Eric Scheffer. The company’s kitchen and staff have operated out of the DoubleTree by Hilton Asheville-Biltmore for the past ten​ years as the exclusive caterer for the hotel. Dining Innovations is a premier caterer with focus on fresh, high quality food ​in Western North Carolina. They specialize in Weddings, Corporate Events, Holiday Parties and Special Family Events.

Christina Lock
Executive Chef

Originally from Chico, California, Christina Lock brings creativity, passion and leadership to the kitchen. Lock graduated from the California Culinary Academy with a degree in culinary arts.

She and her talented team are responsible for all food and beverage at DoubleTree Hotel, as well as outside catering events through Dining Innovations. With her leadership, the hotel is consistently ranked in the 10-top among all 397 DoubleTree by Hiltons in the Americas’ Region.

She started her career at Poggio Trattoria in Sausalito, CA helping it become a 3-star restaurant. She left Poggio to travel and cook throughout Italy. Lock’s travels brought her to work in Verona, Santa Lucia and La Spezia, where she specialized in Northern Italian cuisine, honing her skills in a variety of restaurant settings. In 2011, Christina moved to Asheville and began working for Dining Innovations.

Ivan Nazario-Zapata
Catering Manager

Ivan Nazario-Zapata is our catering manager with over fifteen years of experience in food and beverage. Ivan has a culturally rich and diverse background in the hospitality industry. Originally from Puerto Rico, Ivan has lived in Spain, Italy, Norway, Louisiana, and Texas.

Before moving to Asheville, Ivan was catering manager for Pascal’s Catering of Austin and for the Audubon Nature Institute of New Orleans. Ivan is a natural leader who strives to impress his clients with his high level of detail and organization skills. His charismatic persona enhances his clientele experience and never fails to impress the guests.

In 2012, Ivan moved to Asheville and now considers it his home. When not working, he loves going on hikes and can be found dancing Flamenco and performing other Latin dances in local clubs.

Liz McCutcheon
Banquet Manager

“Taste or Commit?”

Liz is our banquet manager and has been a part of Dinning Innovations for over 6 years. She is confident in saying she has one of the best catering team in all WNC with solid and reliable banquet captains and experienced bartenders. Liz also has a long history behind a bar and she designs all the specialty cocktails and bar menus for Dining Innovations. Liz was born and raised in Atlanta, Georgia but came to the beautiful area of Western North Carolina to attend Appalachian State University in Boone, NC. Over the years Liz has lived and traveled throughout the southeast to the Rocky Mountains of Colorado developing her skills in the mixing craft. She has worked in all aspects of the hospitality business and loves to cater to all sorts of different tastes and preferences. Liz has honed her own skills in the art of home brewing and wine fermenting and now she continues to expand her knowledge in modern homemade mixers, vermouths, and bitters. She is confident that with your ideas and favorite flavors she can come up with some great mixes for any event or specialty cocktail menus.
